Blueberry Scone Recipe

This blueberry scone recipe makes really delicious scones. The combination of blueberries and lemon zest is wonderful. Make this scone recipe as gifts for teachers, get well gifts, or hostess gifts. Of course, they are a great additions to many theme gift baskets.

blueberry scones Ingredients:
   2 cups flour
1/4 cup sugar
   2 teaspoons baking powder
1/4 teaspoon salt
   1 teaspoon lemon zest (optional)
   4 tablespoons (1/2 stick) butter, chilled
3/4 cup milk
   1 cup blueberries, fresh or frozen

Preheat oven to 400 degrees.

Place flour, sugar, baking powder, salt, and lemon zest in large mixing bowl. Cut in the butter with a pastry blender or fork until mixture is crumbly. Add milk and blend well (the dough will be sticky).

Gently stir in blueberries.

blueberries Place the dough on a lightly floured surface and gently knead for 12-16 strokes until the dough is almost smooth. Pat or roll the dough into a 1/2 inch thick circle. Cut the circle into 8-12 triangles or into 2" circles using a biscuit cutter. Place triangles or circles 1" apart on an ungreased baking sheet. Brush with milk and sprinkle with sugar.

Bake for 12-15 minutes until golden brown. Cool on a wire rack.
Alternatives:
Replace the blueberries in this scone recipe with raspberries, raisins, or dried cherries or cranberries.

Gift Decorating Ideas:
If you are giving these scones as an individual gift, place them in a small basket lined with either a cloth or heavy paper napkins. If this is a holiday gift, place the scones in a theme plastic bowl or small shopping bag. Your local dollar store usually has small baskets, shopping bags, and plastic holiday serving containers.

If you want to the scones as a gift in a homemade gift basket, simply place them in a clear cello bag and tie it closed with a pretty ribbon.
