Pumpkin Muffin Recipes

Any one of these pumpkin muffin recipes would make a great gift to place in homemade Thanksgiving food gift baskets. Or as thoughtful gifts for teachers, neighbors, or as a hostess gift.

To present the muffins as a standalone gift, line a small wicker basket with a fabric or quality paper napkin, wrap each muffin individually in clear food safe wrap, and add a gift tag. Or place them in a small shopping type of gift bag also lined with napkins or a pretty kitchen towel.

Pumpkin Muffin Recipes Options:

These basic ingredients (with your choice of one additional ingredient) are actually several different pumpkin muffin recipes. If you prefer basic pumpkin muffins, use the recipe below as is. Or, you can add one of these ingredients:

  • 1 cup chocolate chips

  • 1 cup raisins

  • 1/2 cup chopped nuts: walnuts, pecans, or almonds

  • 1 apple, peeled and finely chopped
Basic Recipe Ingredients:

2 cups flour
1/2 cup brown sugar
3 teaspoon pumpkin pie spice
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs, lightly beaten
1 cup canned pumpkin
1/2 cup vegetable or canola oil

Preheat oven to 350 degrees. Lightly oil (or spray) muffin tins or use fluted paper liners.

In large bowl combine flour, sugar, pumpkin pie spice, baking powder, baking soda, and salt.

In a separate bowl, combine eggs, pumpkin and oil. Stir this into dry ingredients just until moistened (do not over mix).

Fill muffin cups nearly full.

Bake for 25 to 30 minutes or until done; insert a toothpick to test for doneness. Cool in pan for 10 minutes; remove to wire rack to continue cooling.
Makes 12 muffins.

More Options:
  • Mini Muffins: Use the above recipe to make about 36 mini muffins; bake at 350 degrees for 12-15 minutes.


  • Streusel Topping: For a streusel topping, mix together 4 tablespoons softened butter, 1/3 cup flour, 1/3 cup brown sugar, and 1 cup chopped walnuts, pecans or almonds. Put about 1 tablespoon on top of each muffin before baking.


  • Orange Drizzle Topping: Mix together 1/2 cup confectioners sugar, 4 teaspoons orange juice, and 1/2 teaspoon grated orange zest. Drizzle over warm muffins.
