This mocha pudding mix recipe makes a wonderful dessert type of gift for those who are under the weather, as a hostess gift, or as a "just because" gift. For a hostess gift, multiply the ingredients by the number of guests and purchase that number of mugs.

Place the completed gift(s) in a clear bag and place it in a small shopping bag lined with tissue paper. For a hostess gift when you are presenting more than one, place the mugs in a wicker basket lined with shred so the mugs don't knock together.

INGREDIENTS:

1/3 cup sugar
2 tablespoons cornstarch
2 tablespoon unsweetened cocoa powder
1 teaspoon espresso powder or instant coffee granules
1/8 teaspoon salt
1-1/4 cups milk
1 tablespoon butter
1/2 teaspoon vanilla

Mix sugar, cornstarch, cocoa powder, espresso powder, and salt in a small saucepan. Mix in milk and cook over medium heat, whisking constantly until large bubbles form.

Reduce heat to low and whisk in butter and vanilla until well blended. Pour into mug. Press plastic wrap onto pudding surface and refrigerate until cold.

OPTION: Instead of mugs you can substitute dessert dishes, ramekins, custard dishes, etc.
