Chocolate No Bake Cookies Recipe

This chocolate no bake cookies recipe are chocolate balls rolled in confectioner's sugar is not only easy, but delicious. Once you try them, you'll make them as gifts for neighbors, friends, work associates, and family. Make several gifts at a time packaging them in coffee mugs, small tin gift boxes, or even decorative cello bags. Simply add a bow or curly ribbon and a gift tag. If you are making a gift basket, include several cookies wrapped in cello wrap or a cello bag.

chocolate no bake chocolate cookies Ingredients:
1 cup finely chopped nuts (pecans or walnuts)
2 cups crushed shortbread cookies
1-1/4 cup confectioner's sugar, sifted
2 tablespoons cocoa powder
1/2 teaspoon ground cinnamon
1-1/2 teaspoons instant expresso or coffee crystals
5 tablespoons strong brewed coffee or expresso
Option: 1/2 cup confectioner's sugar, sifted

Combine chopped nuts, crushed cookies, 1-1/4 cup confectioner's sugar, cocoa powder, ground cinnamon, and instant expresso or coffee crystals in a large mixing bowl. Add brewed coffee or expresso using enough to moisten (you may not need the entire 5 tablespoons).

Shape into 1 to 1-1/2 inch balls. Roll in the optional confectioner's sugar. Place the cookie balls on waxed paper and let stand until dry. If not using immediately, store in a tightly covered container. If desired, roll again in confectioner's sugar before presentation. This no bake cookies recipe makes 30-40 cookies depending on size of the balls.
