Mini Muffin Recipe With Dried Fruit:

Cranberries, Apricots, Blueberries, Cherries, or Raisins

This mini muffin recipe can easily be personalized with the recipient's favorite fruit. This recipe makes about 12 mini muffins, so double it and keep some for your own family.

Use a small basket to present this gift. Line the basket with colorful quality dinner-type paper napkins. If desired, you can place the finished basket in a cello basket bag and tie it with narrow ribbon, raffia, or twine.

Another nice way to wrap this gift is by placing the muffins in a decorative cello bag and secure the bag with ribbon.

cello bags INGREDIENTS:

3/4 cup all-purpose flour
1/4 cup sugar
1/8 teaspoon baking soda
1/8 teaspoon baking powder
pinch of salt
pinch of ground nutmeg
1/4 cup dried fruit: raisins, blueberries or chopped apricots, cherries, cranberries, or pineapple
1/4 cup (1/2 stick) butter, melted and cooled to room temperature
1 egg
1 tablespoon milk
1/2 teaspoon vanilla

Preheat oven to 350 degrees.

Spray 12 mini muffin pan cups with nonstick cooking spray or line with paper mini muffin cups; set aside.

Combine flour, sugar, baking soda, baking powder, salt and nutmeg in a mixing bowl; stir in dried fruit.

In another bowl whisk together melted butter, egg, milk, and vanilla. Add flour mixture; stir until smooth.

Spoon batter into prepared mini muffin cups.

Bake for 12-15 minutes or until inserted toothpick comes out clean.

This mini muffin recipe makes 12 muffins.
