Homemade Chocolate Candy Recipes

Here are two of my favorite homemade chocolate candy recipes from one of my favorite cookbooks: "Hershey's Chocolate Lover's Cookbook". This cookbook was originally published in 1983 and is no longer available. The photos are also from the cookbook.

Chocolate Mint Squares

Chocolate Mint Squares    6 tablespoons butter
1/2 cup Hershey's Cocoa
   2 cups powdered sugar
   3 tablespoons plus 1 teaspoon milk, divided
   1 teaspoon vanilla extract
   Mint Filling

Recipe for Mint Filling
   1 package (3 oz.) cream cheese, softened
   2 cups powdered sugar
1/2 teaspoon vanilla extract
1/4 teaspoon peppermint extract
   3 to 5 drops green food coloring

Line 8-inch square pan with foil. In small saucepan over low heat, melt butter; add cocoa. Cook, stirring constantly, just until mixture is smooth.

Remove from heat; add powdered sugar, 3 tablespoons milk and vanilla. Cook over low heat, stirring constantly, until mixture appears melted and glossy. Pour half of mixture into prepared pan; spread quickly. Refrigerate. Prepare Mint Filling; spread over chocolate layer. Refrigerate 10 minutes.

To remaining chocolate mixture in saucepan, add remaining 1 teaspoon milk. Cook over low heat, stirring constantly, until chocolate is melted. Spread quickly over filling. Refrigerate until thoroughly chilled. Cut into squares. Store in refrigerator.
About 4 dozen candies.

MINT FILLING: In small mixer bowl, beat all ingredients until smooth. Add 2 to 3 teaspoons milk, if needed, for spreading consistency.

Chocolate Marshmallow Slices

1/2 cup (1 stick) butter or margarine
   2 cups (12 oz. pkg.) Hershey's Semi-Sweet Chocolate Chips
   6 cups (10-1/2 oz. pkg.) miniature marshmallows
Chocolate Marshmallow Slices    1 cup finely chopped nuts
   Additional chopped nuts

In medium saucepan over low heat, melt butter and chocolate chips,stirring constantly, until blended. Remove from heat; cool 5 minutes

Stir in marshmallows and 1 cup nuts; do not allow marshmallows to melt. On wax paper, shape mixture into two 7-inch rolls. Wrap in foil; refrigerate about 20 minutes.

To coat rolls, roll in additional chopped nuts. Wrap; refrigerate overnight. Cut rolls into 1/4 inch slices. Store in airtight containers in cool, dry place.
About 3 dozen slices.

Gift presentation ideas for your homemade chocolate candy recipes:

(1) Wrap each piece of candy individually in clear food wrap (such as Sarah Wrap and place several pieces in a large coffee mug, brandy snifter, or other decorative glassware. Plastic glasses or mugs work well, too, particularly if you are concerned about breakage.

(2) Place each piece of candy in a fluted paper cup; shiny ones look nicer than the common pastel colored cupcake-type of cups. Then you can place them in a box, tin, or small basket.

(3)Visit your local party supplies store for decorative cellophane bags to hold the candy. Finish it off with pretty ribbon and a gift tag. This is a wonderful gift idea for teachers.

(4) When in doubt as to giving a gift to a coworker, teacher, friend, or a family member, follow these suggestions to make a chocolate gift basket; using one of these homemade chocolate candy recipes as one of the gift items.
