Fruit Vinegar Recipe

Raspberry, Blueberry, Nectarine, Apricot, or Peach

Any variation of this fruit vinegar recipe would make a nice gift to place in a homemade gift basket. Also, a standalone gift for teachers, hairdressers, neighbors, coworkers, etc.

Fruit flavored vinegars are probably the most versatile of all vinegars. Add it to marinades, fruit salads, or even mayonnaise for your favorite sandwich salad (such as chicken salad).

The best method for making fruit vinegars is to cook the ingredients briefly in the vinegar; then steep.

The base vinegar you choose will affect the color and flavor of the finished product. Red wine vinegar is a good choice to use with raspberries or blueberries as it enhances the color. For most other fruits, white wine vinegar is the better choice.

Raspberry Fruit Vinegar Recipe

Ingredients:

2-3 cups fresh raspberries, lightly mashed
   2 cups red wine vinegar
   2 tablespoons sugar or honey

Combine ingredients in the top of a non reactive double boiler. Place over boiling water, reduce heat, and cook uncovered over lightly simmering water for 8-10 minutes.

Pour into a large glass screw top jar. Store for 2 weeks. Strain to separate the vinegar from the berries, pressing gently on the berries to extract the juice. If the vinegar is cloudy, pour through a paper coffee filter. Pour into clean bottles; add several fresh raspberries.

Options:
  • Blueberries instead of raspberries; made the same way using either red or white wine vinegar.

  • Frozen raspberries or blueberries can be used instead of fresh. If the frozen berries are pre sweetened, eliminate the sugar or honey.

  • Nectarines, apricots, or peaches are another option. Follow the recipe above for raspberry vinegar using white wine vinegar for the base. Also, peel the fruit first by dipping briefly in boiling water; the skin should slide off easily with your fingers. Cut the peeled fruit in chunks.
