Date Nut Bread Recipe
Baked In A Mini Loaf Pan
This date nut bread recipe makes a wonderful gift for a teacher, as a hostess gift, or for anyone on a holiday or other special occasion. Purchase several foil disposable mini loaf pan and make several at the same time.
After the loaves have cooled, wrap each on in clear plastic wrap and tie with raffia, curly ribbon, or twine. Or, wrap in a tea towel or cloth napkin (after you have wrapped in clear plastic wrap) and tie it closed with a wider ribbon.
INGREDIENTS:
2/3 cup all-purpose flour
3 tablespoons sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon baking powder
1/8 teaspoon baking soda
Pinch of salt
6 chopped dates
2 tablespoons chopped walnuts
3 tablespoons vegetable oil
1/4 cup milk
1 egg
Preheat oven to 350 degrees and spray mini loaf pan(s) with nonstick cooking spray.
Combine flour, sugar, cinnamon, baking powder, baking soda, salt, chopped dates, and chopped walnuts in a small bowl and set aside.
Whisk vegetable oil, milk, and egg together in a medium size bowl until smooth. Add dry mixture and stir well until smooth. Spoon into prepared loaf pan(s).
Bake for 30-40 minutes until inserted toothpick comes out clean. Cool in pan for ten minutes, remove from pan and allow to cool completely on a wire rack, and wrap as desired.
