Chocolate No Bake Cookie Recipe
Haystack Cookies
Even children (with a little supervision) can make this chocolate no bake cookie recipe, which is also known as Haystack Cookies. Let the kids make them for their teachers or grandparents. The only time they may need supervision is to microwave the chocolate chips.
Present the finished cookies as a gift by placing a decorative paper napkin in a small basket, tin can, or plastic holiday dish. Then arrange the cookies in the container, tuck in a couple of tea bags, envelopes of hot cocoa mix, or a small can of gourmet coffee. If desired, place the finished gift in a clear plastic bag with a twistie tie to keep it dust free, and top it off with a gift card.
Ingredients:
1 cup semi-sweet chocolate chips
1 cup dry (crispy) chow mein noodles
1/4 cup roasted almonds or peanuts
1/4 cup shredded coconut
1/4 cup raisins or dried cranberries
Mix the chow mein noodles, nuts, coconut, and raisins in a small bowl and set aside.
Place the chocolate chips in a mug or other microwave-safe container; heat on medium heat, stirring occasionally until the chocolate is smooth and melted.
Pour melted chocolate over noodle mixture and stir until coated evenly.
Using a small ice cream scoop or tablespoon to make evenly sized balls and place them on a cookie sheet lined with waxed paper. Refrigerate until set, which will take at least an hour.
This recipe will make 10 haystack cookies.
