Chocolate Cookie Recipes

Hershey Kiss Cookies and Peanut Butter Cup Cookies

These chocolate cookie recipes are delicious as well as easy to make. They would make lovely gifts for your gift baskets as well as standalone gifts for anyone who loves chocolate. I found this recipes many years ago in "Hershey's Chocolate Lover's Cookbook" which is now out-of-print.

There are many ways to present these cookies as beautiful gifts. Clear cello bags are nice and easy to work with. After you fill the bag, simply tie it closed with curly ribbon, raffia, or any kind of narrow ribbon. Don't forget to include a small tag with the ribbon. Of course, you could use any kind of boxes or cans to hold your cookies.

Secret Kiss Cookies

1 cup (2 sticks) butter or margarine, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour
1 cup finely chopped walnuts
1 bag (6 oz.) HERSHEY"S KISSES Milk Chocolates
Powdered sugar

In large mixer bowl, beat butter, granulated sugar and vanilla until light and fluffy. Add flour and walnuts; beat on low speed of electric mixer until well blended. Cover; refrigerate dough 1 to 2 hours or until firm enough to handle.

Remove wrappers from HERSHEY"S KISSES. Heat oven to 375 degrees. Using approximately 1 tablespoon of dough for each cookie, shape dough around each chocolate kiss; roll or make ball. (Be sure to cover each chocolate piece completely.) Place on ungreased cookie sheet.

Bake 10 to 12 minutes or until cookies are set but not brown. Cool slightly; remove from cookie sheet to wire rack.

While still slightly warm, roll in powdered sugar. Cool completely. Store in tightly covered container. Roll again in powdered sugar just before serving.
Chocolate Cookie Recipes: Makes About 3 dozen cookies.

Peanut Butter Cup Cookies

About 40 (14-oz. pdg.) REESE'S Peanut Butter Cups Miniatures
1/2 cup (1 stick) butter or margarine, softened
1/2 cup REESE'S Creamy Peanut Butter
1/2 cup packed light brown sugar
1/4 cup granulated sugar
1 egg
1-2/3 cups all-purpose flour
1 teaspoon baking soda
1 egg white
1 tablespoon water
1 cup crushed corn flakes

Heat oven to 375 degrees. Remove wrappers from peanut butter cups. In large mixer bowl, beat butter, peanut butter, brown sugar and granulated sugar until light and fluffly; blend in egg.

Stir together flour and baking soda; add to butter mixture.

Shape dough into 1-inch balls. Stir together egg white and water; beat with fork until foamy. Roll balls in egg water mixture, then in crushed cereal. Place on ungreased cookie sheet; press with thumb or finger tips in center making an indentation.

Bake 8 to 10 minutes or until cookies are set. Remove from oven; and immediately press peanut butter cup into each cookie. Cool 1 minute; remove carefully from cookie sheet to wire rack. Cool completely.
