Chocolate Chip Oatmeal Cookie Recipes

Both of these chocolate chip oatmeal cookie recipes are easy to make and yummy to eat. One recipe is for drop cookies and the other for bar cookies. The oatmeal gives them a chewy texture. Obviously, if you overbake the cookies, they might lose that chewy texture.

There are several decorative methods to present these chocolate chip oatmeal cookie recipes as gifts. You can wrap each cookie individually in Saran type of wrap or place several in a decorative cello bag; these bags are readily available in most party supply stores. To hold the bags closed, simply tie with a narrow ribbon or even a piece of twine, which gives a rustic look.

Once you have wrapped the cookies so they won't collect dust, you can place them in a tin box, small basket, small shopping bag, or include as a gift in any of your homemade gift baskets.

Chewy Oatmeal Chocolate Chip Cookies

Ingredients:
1/2 cup (1 stick) butter, melted
1 can (14 oz.) sweetened condensed milk (not evaporated milk)
2 eggs, beaten
1 teaspoon vanilla extract
1-1/2 quick cooking oats
1 cup biscuit baking mix (such as Bisquick)
1/4 teaspoon salt
2 cups (12 oz.) chocolate chips

Preheat oven to 350 degrees, Lightly grease cookie sheets.

Place all ingredients in large mixing bowl and stir until well blended.

After dough has rested for 10 minutes, drop teaspoonfuls onto cookie sheets.

Bake for 8 to 10 minutes or until the cookie tops begin to dry (if you overbake the cookies will not be chewy). Cool for 5 minutes on cookie sheets; then place on wire racks to cool completely.
About 4 dozen cookies.

Chocolate Chip Bar Cookie Recipe With Oatmeal

1/2 cup (1 stick) butter or margarine, softened
1/3 cup packed brown sugar
1/3 cup granulated sugar
1 teaspoon vanilla extract
1 egg
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1-1/2 cups quick-cooking oats
1-1/2 cups (9 oz.) chocolate chips

Preheat oven to 375 degrees. Grease a 9 inch square baking pan.

In large mixing bowl, beat butter, brown sugar, granulated sugar, and vanilla until creamy. Beat in egg until well blended.

In another bowl, stir together flour, baking soda, and salt. Blend this mixture into the butter mixture. Stir in oats and chocolate chips.

Spread the dough into prepared pan.

Bake 15-20 minutes or until a toothpick comes out almost dry (if overbaked the bars will not be chewy).

Cool completely in pan on wire rack. Cut into bars.
About 16 cookie bars.

Then when I get a last minute urge to bake some cookies, I can do it quickly and easily. The mixes are easy to prepare; adding chocolate chips which I keep on hand in the refrigerator.
